Over Turkey
Ingredients
leftover turkey, chopped
new (waxy) potatoes, ideally Pink Fir Apple or
Ratte
½-1 small can anchovies, chopped roughly
(according to the amount of turkey you have and
how much you like anchovies)
½ clove garlic, crushed to a purée with a fork
few spring onions, or 1 small red onion, sliced
finely
olive oil
lemon juice
fresh parsley
Method
Mix the anchovies with the garlic, 1 tbsp of
olive oil and a squeeze of lemon.
Toss this mixture with the turkey and onion and
leave to macerate while you boil some new potatoes
until tender.
Slice the potatoes when still warm and toss
immediately with the turkey and some chopped fresh
parsley leaves.
Other possible additions include black olives,
capers and sun-dried tomatoes.
Devon Apple Cake
Ingredients
One and half pound
Cooking Apples
Three desert
spoons of Devon Honey
Four Ounces of
breadcrumbs
Two Ounces butter
Half Pint of
Whipped Devon Cream
Half Pint of sweet
Devon Apple Juice
Slice of Lemon
Method
Wash, peel, core
and chop apples, place them in a saucepan,
containing the sweet apple juice and slice of
lemon to control browning.
Heat gently while
blending two desert spoonfuls of honey, until the
apple is tender [15/17 minutes] and mash into a
puree
Heat the two
ounces of butter gently in a frying pan, adding
the breadcrumbs, until golden brown.
Place the golden
brown breadcrumb mixture at the bottom of a
serving bowl
The apple puree
mixture is then added.
Smooth the service
and place the whipped cream on top.
Finally add the remaining desert spoonful in a
spiral pattern
